1. In a microwaveable dish or measuring cup, mix 2 cups of mini-marshmallows and 2 tbsp of water. Heat in the microwave until soft (approx. 30 seconds).
2. Pour mixture into a standing mixer fitted with a dough hook and gradually add 3 cups of icing sugar. You may need to use more or less icing sugar depending on the consistency you like. Let the mixer do it's work and after a few minutes, on medium speed, you should have a beautiful ball of "kneadable" dough!
3. Put a little shortening on your fingers/spoon to lift out the dough and work with it. This will keep the fondant from sticking to everything. You can also use a little cornstarch on your counter. Use immediately - wrap remainder tightly with plastic wrap. It does not last long, but to possibly use later, carefully reheat in the microwave. THis makes enough to cover and decorate an 8" round cake.
