White on White Topsy-Turvy Wedding Cake


I recently made this elegant, yet fun wedding cake for an outdoor wedding. The flavours were red velvet cake with cream cheese filling, and dark chocolate cake with chocolate ganache filling. The bride also ordered chocolate cake pops for her bridesmaids as they got ready for the wedding. I made the tiers higher than I normally would in order to feed the same number of people after carving the cake in it's topsy-turvy shape. I also visited the gardens where the wedding was being held, and a white cake like this would definitely stand out amongst such beautiful flowers and greenery!


Note: It is always hard to beat the heat at an outdoor wedding, especially with a cream cheese filling, but I find that Fondx fondant does a great job in the transition from the fridge. I have always used marshmallow fondant on birthday cakes and some wedding cakes, but recently have had to change to a ready-made fondant for efficiency reasons.

This cake was also difficult as it was very WHITE! Everything shows. It is hard to see in this lighting, but much of the cake is hand-painted with white lustre dust (and a little disco glitter). I had to be very careful that nothing touched or discoloured the paint while it was still wet.
